Building a Bar Menu Everyone Can Toast With
At Parceros Collective we believe a celebration only works when everyone has something beautiful in their glass — and that includes the friends who don't drink, the ones who are pregnant, the ones in recovery, and the ones who simply want to stay sharp for the dance floor.
Start with the guest list, not the spirits. Before we touch a bottle we ask hosts about dietary preferences, cultural touchstones, and any guests who'll appreciate a thoughtful zero-proof option. The goal is parity: the non-alcoholic drink should feel as crafted as the headline cocktail.
Borrow from heritage, but never lock the door. Our menus often nod to South American flavors — panela, passionfruit, hibiscus, cacao — because that's part of our story. But great hospitality is open-armed. A Negroni sits next to a tamarind cooler. A bourbon flight shares the bar with a Persian saffron lemonade if that's what the family loves.
The result is a room where nobody is the exception. That's the whole point of 'parceros' — close friends, gathered, together.
